Fried Rice

Fried Rice
To serve 4 as a side dish

What you need :

• 4 cups cooked brown rice (you can do this the night before, or earlier in the day)
• 3 rashers of bacon – diced
• 2 carrots – diced
• ½ red capsicum – diced
• 1 onion – finely chopped
• 2 cobs corn – use a sharp knife to slice off the kernals
• 3-4 mushrooms – sliced
• 3 shallots (spring oinions) – finely sliced
• 1 cup frozen green peas
• 2 eggs
• 2 Tbs milk
• Olive oil
• Tamari – Organic (healthy version of soy sauce !)

What you Do:
In a Wok or fry pan – put a few tablespoons of Olive Oil and cook the bacon, onion, carrots and capsicum until just turning soft. Then add the mushrooms and corn kernals and peas for another 3- 4 mins. Then add the spring onions, and rice – stir until combined. Add in Tamari to taste and some more Olive Oil if needed.

To make Omelette Egg Rolls – whisk the 2 eggs with the milk , then in a small non stick pan place ¼ of the mixture , spreading it around the whole pan and cook like a pancake, then using a spatula lift up the edges and roll in onto itself – so you create a rolled omlette. Repeat 4 times until all mixture is used and you have 4 egg rolls. Stir this through the fried rice, or serve sliced on top.

** You can just make a normal omelette and chop it up if you don’t have time to do the rolls !

• Great for kids lunchbox (in a Thermos) , afternoon tea, or as a side to some Chinese Pork Fillet, Pulled Pork or Grilled Chicken for dinner.
• Also yummy for breakfast with and extra fried egg on top !
